Why Does the Stoich Table Have Varying Values

Below is a snapshot from my E38 ECM. I understand the concept of Stoich and Lambda etc. but why is there a table from 0 to 100%?, that is 0 to 100% of what? In a non flex fuel system why is there not 1 cell only that can be filled at 14.7 for good gas or 14.1 for 10% ethanol for example?

Because stoich changes according to alcohol content.

yea most if not all e38 can be flex enabled so the stoich table has to be able to suit

Like they said its there to suit flex so if not on flex just set the entire table to 14.7 or some do 14.1 for e10.
