2011 CTS-v twin turbo HELP!!!

I have a 2011 twin turbo cts-v on E85... I have been working on for some time. It's a long story but I purchased it from a dealership. they had it tuned in AZ and when i received it in OK it ran like complete hell up to and including a blown head gasket. I called the shop in AZ that did the tuning, and they couldn't help as the tuner was a 3rd party guy that stops in from time to time. I went to a local guy here and he also had a 3rd party guy pull my tune and adjust the best he could. I pulled everything down to the block and came out with all new everything. i will lists the parts below with the cam specs. I recently purchased the MPVI3 and i was able to copy the current tune file and also created two driving logs. The first driving log is "Caddy trip 1" it was a nice and easy trip to the station to fill up on E-85. "Caddy trip 2" is coming back from that station easy and also a full throttle pull. overall it runs like complete shit!! until the boost hits. it studders horrible coming up on the throttle like the timing is everywhere and its getting over fueled. PLEASE EXCUSE ME I KNOW NOTHING ABOUT TUNING, unless its a carb....I know, not what you want to hear but I'm a quick study. I cant seem to get help any avenue i turn down. I honestly hope you guys can help me out.
