Not sure what tables you are talking about.
There is a boost enrichment table under Power Enrichment that you can set for boost. You can have the regular EQ ratio be leaner, then have the boost enrichment table add more fuel under WOT at a certain KPA level if you wanted it too. Or you can set both the PE and BE tables so they call for the same AFR at full throttle.
The only "speed density" thing in the tune was the 2 bar OS that you upgraded the tune file too. Once the upgrade was complete you added more values to the primary VE table. The table extends from 0-105kpa to now like 30-210 kpa. Also the BE and a few other minor things are added for a speed density OS.
The MAF reads because it's still plugged in and you are logging the data. It's just how they work, you should remove the MAF channels from the main channel display as you don't need to log them anymore. Remove the MAF sensor altogether if you want but you will have to wire in a seperate IAT sensor from the harness.
