So I have a few questions in regards to ethanol tuning.
1. How much ethanol can be added without needing to modify your tune and will it add anymore power?

You can tune it with the stock oxygen sensors as well, just not WOT tuning. You can dial in your VE tables though.
A log is a .hpl file format.

More than likely you'll need to copy over the short pulse adder and offset tables from the supplied injector data.
You are going to need to start by researching scaling your injectors. There is lots of information on it in this forum, do a search. I've read up on it and am going to do it soon.
