ford v10 conversion

Ok here goes another tech challenged question. I want to install a 6.8 v10 into a 66 1/2 ton I would like to do it without converters, EGR, pats, I don't even have the donor yet I would get a two valve with the cast manifold my concern is weather or not it is doable with the HP tuners programs. the reason I am looking here is I haven't been able to get any answers for having it done so ill do it myself. the problem is I don't know anything about this stuff and it seem like ford changed stuff daily so if anyone could point me in the right direction I would appreciate it very much
