Is this a safe way to progress?

I am hopefully doing some WOT tuning at the weekend. I'm in permenant OL with no MAF (+MAF fail = 0Hz).
Firstly I want to finalise the VE table.
I've set stoich at 14.68 and set open loop enrichment to 1.00 all over and disabled COT.
I was planning to disable PE via the MAP, TPS and RPM for the VE tuning.
I'm also only running the high octane spark table at the moment. Can the PCM still control any knock during tuning ok?
    Am I heading for problems?

For the WOT I've set PE at 1.15 all over for initial runs, no delay and max enrichment rate.
The car is mainly used on the track. It is very light and prone to wheel spin. So is it ok to PE from low %TPS and low MAP (high vacuum, e.g. feathering the throttle prior to powering out of a bend)?
I basically want to have max output all the time unless I'm off or feathering the throttle to maximise the entire power band.

Additionally the VSS is not connected. What should I disable to counteract any PCM interference in the performance?
Any advice gratefully accepted. and, yes, I'm still learning .
    Tom.
