What controls engine cutoff due to overheat?

Which tables and/or fields control how hot the engine can get before it shuts down to prevent damage? What temp should that be?

Probably no chance of adding it, eh? Only reason I ask is that I blew a head gasket causing minor warpage & a guide failure. I thought maybe something I had done in the tuning might have raised the value unexpectedly, and that lowering the value a bit might have prevented the some of the results. I definitely wouldn't want to go higher
