Are you using a flex fuel sensor or is it a early computer without flex fuel?

Try to set the stoich for the fuel that you can obtain at the pump, most places aren't real E85. Around here it's E50-E70 all year round so picking a stoich ratio around there is a good start.

If the injector data is already entered and it was running okay before hand, see if it starts and runs. Heck it might even be good enough to drive. Use your wideband if any major fueling adjustments are needed right off the bat. If it's real lean at idle or part throttle, add fuel to the VE to make it run better.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.
