Tuninig questions COT or no COT

I have transplanted drive train from 2003 1500 Suburban to 1972 C20 only thing left of original drive train is differential, so gear ratio went from 3:73 to 3:54. Exhaust 2.5" with NO catalytic converters, and have deleted second set of o2 sensors.

    Questions are:
    1. Since I do not have cats should I disable COT and what would be the affect of doing so?
    2. Should I consider flashing computer with a truck configuration?

I am new to tuning, and would appreciate any suggestions

You can disable it if you want.

Switching to a truck configuration wouldn't change anything, the suburban is a truck. There are very minor differences between a silverado and suburban tune from the same year.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.
