fueling question for 2.4 LE5 supercharged swap

Quick question with regards to fueling. If i was to run MAF only for fueling for my 2.4 LE5 supercharged setup, how would I define a value other then stoich when the car gets close to 0 vacuum and +1psi on the MAP in relation to the MAF table. Is this done via LTFT MAP limits? As far as Im understanding it the car is going to still be in closed loop even when I get close to zero vac and thus I wouldnt be able to appropriately scale the MAF tables to a richer AFR as long as fuel trims were active. Any insight on how this might work?
