What would happen if I had 3-bar map sensors and uploaded a tune based for the stock SSTC sensors?

um your air fuel would be all over the place especially when you boost....we consider that a safe to drive setup only for taking it into the dealership or to a local hpt tuner to be flashed with the proper sensor calibrations.
and i would bet you throw map sensor codes for manifold, and charge pipe locations....quite possibly missfire codes and or an 02 sensor code.

I've accidentally done it the opposite way, (2.5 bar data in a 3 bar app) and it boosted weak until I caught it. The way you state would prob make it overboost.

ive been there.....on factory studs......still have a head gasket in one piece lol it was a tuning boo boo i fixed it.

I would like to think you would go into limp mode when you got on the throttle. The MAF,TPS and MAP wouldn't jive and the ECU would realize an issue and keep the motor safe as possible.
