Man, we need a lot more info, we have no idea what you are talking about. What kind of car? What gas are you running now? What tables are you talking about?

E85. It is going to the UK. Is there any tables that I will need to change? Keeping it on mid to high oct
I thought those cars use the sensor to determine the fuel in it, if it senses 100% regular pump gas then it uses "normal" tables for those.

If I do not have a sensor, is there a way to disable it in the programing?
I wouldnt worry about disabling it because as stated above, it will run on regular gas as well.
