I'd put in a 2001-2002 VE table to start with and I suggest getting larger injectors for when you do start really tuning,

The stock injectors are fine while you finish the project but once you do full throttle tuning past 5,500-6,00rpm, it's likely to run out of injector headroom. You can run stock 8.1 injectors which at 31lb/hr or go to flex fuel injectors which are 33lb/hr. All the data is available.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.

If you don't post your tune and logs when you have questions you aren't helping yourself.
