Im tuning the ve and noticed that when I give it a boot full the timing is going to 0, I have logged everything I can think could be useful,
anyone have any ideas.

It does look like you have a decent amount of spark pull from the IAT spark correction table. I can't view the log but the screen shot shows 37c (~96F) for temp and that can pull up to 6 degrees of timing from the looks of it. I'd push the timing pull out a ways, you don't need it to pull timing until 43-45c. Start yanking 1-2 degrees there and more as the temps gets higher.
Then you also have burst knock still fully enabled. Set the enable delta cyl air table to 7.999 to prevent burst knock from yanking timing when you stab the throttle.
Those are just 2 things I saw on a quick look at it.
2016 Silverado CCSB 5.3/6L80e, not as slow but still heavy.
If you don't post your tune and logs when you have questions you aren't helping yourself.

Some of that is burst knock and some of that is going to be shift tq management. Try this for burst knock
