If you're hearing audible knock under light load I would start by doing an induction service on the vehicle to get it de-carboned. Might want to try high octane fuel if you're not already running it....

The O2s and the trims both are incredibly slow. What's the exhaust setup on it? Headers, manifolds, etc. and how far are the O2 sensors from the cylinder head?
I don't see anything abbie normal in any of the data logs. Do you have a log capturing the event you're talking about? The "Bank 1 goes crazy lean"?

I don't know that. All I know is it's not setup correctly which means it's running off the MAF. Whether the MAF is dialed in correctly or not, I have no idea. But setting the MAF fail Hz to 1 or zero...

The MAF fail hz is only part of the process. You have to set the DTCs up correctly. They way yours are setup, it's keeping it from going into speed density. It HAS to set a P0103 code for it to go...
P0102/103 are set to no error reported. That prevents it from going into speed density. I don't care how many trucks he's done.
If you need to explain this to your tooner, you need a new tooner.
