8 all the way across disables burst knock from my understanding.
Where did you buy them? Can the manufacture not give you the data?

That's what he is telling you, you need the wideband to see where you are. The 'VE is probably way off causing the surging.
I don't know why are are referring to the gauge display, your VE needs to be tuned to correct the rich conditions. There are some guides to show you how to do this.
