I'm not sure what else could be causing it. I got the same "Exhaust Temp Control" limit on my turbo coyote and the Exhaust Temp Inverse Table took are of it.
Max out your Exhaust Temp Inverse table (make all "4"s). That should take care of the "exhaust temp limit"

Forget the defoulers, set tune like picture.
Also, enable rear O2 sensors, FAOSC and heaters. Just make sure rear O2s are plugged in. Then set your DTC codes 420 and 430 to "No Error Reported".
