I seem to remember reading somewhere that on LS1's at least it protects engine by cutting either fuel supply or spark at idle if oil pressure under 8psi. Not sure if pressure scales upwards as rpm...
Looking at your Chart vs Time of your attached "injector duty cycle all over the place" log file I note at 1min 26sec your Manifold Absolute Pressure max's out at 108 kPa despite throttle opening...
1st things 1st. You absolutely need to deal with your crazy fuel trims before doing anything else. You are pulling out 26% fuel and still running rich just before you go into PE.

Not sure if you have deliberately set cylinder volume to 0.42606 litres (converts to total engine capacity of a smidge over 3.4 litres) which will affect majority of ECU calculations.
