Day to day will change your STFT. They will never be perfect in all conditions.
IAT2 is only used in supercharged applications. They are often a different type sensor and uses a different table. IF your car is NA this table does nothing for you.

You need to pull codes after it goes into limp mode. P101 is a code but will not cause limp mode. I don't think P1010 is a code

Weak terminal connection on the coil. not the plug wire.

It's not a good idea to copy over a bunch of things from a different tune file. Especially from a different type of PCM all together.
I'd address the heater codes. If the o2 isn't heating up properly there is a chance it might run the trims up or down before it actually warms up. This looks like the case here.

That code is a mechanical issue. or wiring. I can't see that being a tune problem.
