These cars rarely show knock on nitrous unless something else is way off but reading the plugs will tell another story....

I would never tune a coyote on nitrous with the same wot lambda as N/A especially with a 150 shot. I just dont want to see someone hurt their car.

Like I mentioned earlier advance the intake cam, data log the cam timing and you'll figure out what is going on.
If you take the time and play with it some gains can be had, logs the cam timing and you'll figure out fast what is really going on with them.
Are you looking for a maf curve? If you cant find one I would start off by adding 32 percent and fine tuning from there.
